Easy Peasy Bread Sticks
Our daughter Jocelyne, the baker in the family, found this recipe online and they are delicious and so easy to make.
1 1/2 cups of warm water
1 tbsp sugar
1 tsp salt
1 tbsp Dry Active Yeast
3 1/2 cups of flour
1/2 cups melted Butter
1 cup Grated Parmesan Cheese
Lemon Pepper or Seasoning of your choice
Optional - shredded Cheddar Cheese (about 1 cup or as much as you'd like)
Mix together warm water, sugar, salt and yeast. Allow yeast to activate (about 10 minutes). Add flour and stir in with a fork until dough holds together. Turn onto floured board. Knead lightly into a ball. Divide into 32 equal portions. On floured board, roll out into bread sticks.
Dip bread sticks into melted butter and then into the Parmesan cheese. Place onto greased cookie sheet (16 per bakers half sheet). Sprinkle with lemon pepper or season of your choice. We've used basil and garlic salt and just mixed it in with the Parmesan cheese and it's very tasty. Sprinkle with shredded Cheddar cheese.
Preheat oven to 400 degrees. Cook at 400 degrees for 15 minutes.
This dough may be made in the morning and kept in the refrigerator unbaked. Remove from refrigerator about 30 - 45 minutes before baking.
The finished product. They're delicious with pasta meals and also dipped in pizza or spaghetti sauce.
Hershey's "Perfectly Chocolate" Chocolate Cake (Cupcakes)
Our daughter made these for Mother's Day and they're the best...delicious!
Below is the recipe for the chocolate cupcakes and frosting, they are super moist and the icing is the best homemade chocolate icing I've ever tasted.
2 cups sugar
1 3/4 cups all-purpose flour
3/4 cup Hershey's Cocoa
1 1/2 tsps of baking powder
1 1/2 tsps of baking soda
1 tsp. salt
2 eggs
1 cup of milk
1/2 cup vegetable oil
2 tsps vanilla extract
1 cup of boiling water
Stir together all of the dry ingredients into a large mixer bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer for about 2 minutes. Stir in water. (Batter will be quite thin.) Pour into cupcake pans - the recipe with make 24.
Bake in a 350 degree oven for about 15 - 20 minutes.
Cool completely and then frost.
"Perfectly Chocolate" Chocolate Frosting
1 stick (1/2 cup) of butter
2/3 cup Hershey's Cocoa
3 cups powdered sugar
1/3 cup milk
1 teaspoon vanilla extract
Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency.
Add small amount additional milk, if needed. Stir in vanilla.
The frosting is quite firm and easy to work with.
I thought I'd share a Banana Chocolate Chip Muffin recipe that we love at our home. It's a super easy muffin to make and you only need seven ingredients.
You'll first put all the dry ingredients in a large mixing bowl, stir them together. Then take two ripe bananas and mash them till they don't even look like bananas anymore, add to dry ingredients along with one cup of miracle whip. Stir till moistened and no more. Once all stirred fold in your one cup of chocolate chips.
Here's what the batter should look like, it makes twelve large muffins.

Banana Chocolate Chip Muffins
2 cups of flour
1 cup of white sugar
1 teaspoon of baking soda
2 teaspoons of baking powder
2 ripe mashed bananas
1 cup of miracle whip
Sift dry ingredients together.
Add wet ingredients stir until moistened.
Fold in 1 cup of chocolate chips.
Pour into 12 muffin tins.
Bake in 350 degree oven for 15 - 20 minutes.
